Grilled Lemon-Mint Chicken Skewers on the Traeger, Fresh Summer Recipe

Mint is plentiful in my garden. I only planted one, but as with my family, a little goes a long way. I’ve been looking for ways to use it and decided to try these lemon-mint chicken skewers. The marinade came together quickly, and while the chicken was soaking up all that flavor, I grabbed a few potatoes from the garden to cook alongside on the Traeger.

After about 30–40 minutes of marinating, I threaded the chicken onto metal skewers. You could easily add peppers, zucchini, mushrooms, or tomatoes for more color and flavor, but I kept it simple this time. Onto the grill they went—really a set-it-and-forget-it situation. I flipped them once halfway through and brushed on a little butter for good measure.

Once the chicken hit 165°F, I pulled the skewers off and let them rest. The lemon and mint gave the chicken a bright, fresh flavor that felt perfect for summer grilling. I’ll definitely be making these again.

Grilled Lemon‑Mint Chicken Skewers – Printable Recipe Card

Grilled Lemon‑Mint Chicken Skewers

Serves: 4  •  Time: 45 minutes (plus marinating time)

Ingredients

For the Chicken

  • 1½–2 lbs boneless chicken breasts or thighs, cut into 1½" cubes
  • 3 tbsp olive oil
  • Juice + zest of 1 large lemon
  • 2 cloves garlic, minced
  • 3 tbsp fresh mint, finely chopped (plus more for garnish)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

Optional (for skewers)

  • 1 medium zucchini, cut into thick rounds
  • 1 bell pepper, cut into chunks
  • 1 pint cherry tomatoes

Instructions

  1. Step 1: Marinate the Chicken
    • In a bowl, whisk together olive oil, lemon juice + zest, garlic, mint, paprika, salt, and pepper.
    • Add chicken cubes, tossing well to coat.
    • Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  2. Step 2: Assemble the Skewers
    • Thread chicken onto skewers.
    • If using, alternate chicken with zucchini, peppers, or cherry tomatoes.
    • Discard leftover marinade.
  3. Step 3: Grill the Skewers
    • Preheat Traeger (or grill) to 350–375°F.
    • Place skewers directly on the grill grates.
    • Cook for 15–20 minutes, turning halfway.
    • Remove when chicken reaches an internal temp of 165°F.
  4. Step 4: Serve
    • Garnish with extra chopped mint and a squeeze of fresh lemon.
    • Enjoy as a light main dish with your favorite side.
Skewer tip: If using bamboo skewers, soak in water for 20–30 minutes to prevent scorching. For even cooking, cut chicken into uniform cubes.
